Summer is fast approaching and nothing says summer more than an ice-cream cake. You might be thinking, how can I make a homemade ice-cream cake? Well, I have the simple answer for you.
This is not any ordinary ice-cream cake. This is a Banana Split Ice-Cream Cake. So what kind of cake would be perfect to use in this recipe you might be asking? Well, a banana bread cake! To be honest the real reason I fell in love with this dessert was mostly due to her banana bread cake recipe. It really is one of the best that I have tasted.
She does mention using her homemade no machine ice-cream recipe, but you can also just buy your favorite vanilla ice cream from your local supermarket and it will turn out delicious. In my opinion the real star of this show is the banana bread.
1 ¾ cups/ 225g/ 8 oz all purpose flour
1 tsp Salt
1 ½ tsp Baking powder
1 tsp Ground cinnamon
½ cup/115g/ 4 oz sugar
⅓ cup (3 floz) flavorless oil ( Sunflower, vegetable, canola)
2 tsp vanilla essence
2 ½ /12oz/350g bananas (around 3 medium bananas)
