If you are looking for a refreshing and fruity dessert, than look no further. These Blueberry Lemon Mousse Parfaits are two in one. First they are extremely delicious. The combination of the fruity blueberry flavor with the zesty contrast of the lemon gives this dessert such a kick.
Along with the deliciousness you also have the beauty of this dessert which is completed by using such a simple technique. The combination of colors really makes me think of the great summer times to come.
Ingredients
2 cups fresh or previously frozen blueberries
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
blue food coloring, optional
2 cups whipping cream
1/2 cup white granulated sugar
1/2 ounce (2 packets) unflavored gelatin
1/4 cup water
lemon zest from 1 lemon
1, 6-ounce package berry Jello
Procedure:
Prepare dessert glasses. Place the glasses at a diagonal on a cupcake pan. The pan will keep the cups in place; set aside.
Prepare the blueberry base first. Place the blueberries, sweetened condensed milk and a few drops of food coloring into a food processor. Pulse until mixture is pureed and smooth. Set aside.
Prepare the whipped cream. Pour the heavy cream into a mixer bowl and add the sugar and vanilla extract. Whisk until stiff peaks form. Add the blueberry base and whisk on low speed until well-combined. Zest one large lemon into the mousse.
Sprinkle the unflavored gelatin over 1/4 cup water. Stir, then microwave for 30 seconds or until the gelatin is dissolved. Pour the dissolved gelatin into the mousse and whisk gently. Transfer the mousse into a large, disposable pastry bag for easier transfer.
Fill the prepared dessert glasses halfway at a diagonal. Set the tray into the refrigerator for 1 to 2 hours until the mousse is firmly set. Once the mousse is set, stand the glasses right side up.
Prepare the berry jello according to package instructions, replacing the cold water with ice water to cool the mixture down. Make sure jello is cold before adding to the mousse! Pour the jello over the set mousse, then refrigerate until completely set. Garnish top with lemons, blueberries and/or mint leaves.
