There are times when you just want to bake something easy and quick with the fewest amount of steps possible, however nothing beats the feeling of baking a dessert from scratch and this Vanilla Birthday Cake is one that definitely deserves that extra time.

I’m not sure if I should start with the vanilla cake itself or the buttercream. This cake is moist, soft, and the taste of vanilla is incredible.

Then comes this out of this world buttercream. I know how difficult it is to make buttercream from scratch, which is why most people just buy it from their local supermarket, but if you want to know how to make your very own homemade buttercream this recipe is for you.

Buttercream shouldn’t taste like butter but instead it should taste like air (I know it sounds weird now, but it won’t once you taste it). This buttercream is fluffy, white, and full of air. This is definitely going in my recipe book forever.

3 cups (450g, 15oz) cake flour*, sifted
2 cups (400g, 16oz) granulated sugar
4 teaspoons baking powder
½ teaspoon salt
5 large egg whites, at room temperature
1 whole egg, at room temperature
1 cup (6oz, 170g) whole milk or full fat buttermilk
2-1/4 teaspoons pure vanilla extract
¾ cup (170g, 6oz) unsalted butter, cold
