Ring In The Autumn, And Serve This Delicious Pumpkin Spice Cake This Year

Everywhere you turn during the fall season you will hear the word pumpkin at least 100 times throughout the day, LOL. Ok, I might be exaggerating but I do hear it a lot. So I thought I would just join the trend and show you this scrumptious Pumpkin Spice Cake.

This is one time that I do not mind hearing the word pumpkin because the cake captures the great pumpkin spice flavor that everyone goes crazy for during this time of the season. And if that is not enough flavor, she tops it off with a cream cheese frosting that sets this cake apart from just any other pumpkin spice cake.


For cake layers:
1/2 cup melted butter
3 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups pure pumpkin puree
1 1/2 cups white granulated sugar
1 1/2 cups milk
3 tablespoons instant coffee granuales
2 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon each: all-spice; salt

For Cream Cheese Frosting:
8 ounces softened cream cheese
1 cup, plus 1/4 cup, heavy cream
1 1/2 cups confectioner’s sugar
1 teaspoon vanilla extract
For garnish: toffee bits, chopped nuts, caramel bits, caramel sauce
