During the summer I love to try everything coconut. One might say that I become addicted to it. Nevertheless, when I come across a recipe that coconut is involved I jump on it.
This recipe is extra special because it has coconut but it only takes 4 ingredients to make. In the summer the last thing I want to do is spend my afternoon in the kitchen, so this is a perfect recipe for me.
She combines the coconut with mango but I am sure you can substitute that with any fruit. Mango is a great choice because it is in season but many fruits are. So you can be as creative as you like.
