This, in my opinion, is one of the best homemade chocolate chip ice cream sandwich recipe. Yes, everything is made from scratch, so it will not be as convenient as just grabbing a box from the supermarket, however I guarantee the store bought ice cream sandwich will not be as delicious.
There are so many wonderful things about this dessert, so I guess I should just get right into it.
First, let’s begin with the ice-cream. The ice cream is extremely creamy and soft, which really surprised me because usually when I make homemade ice-cream (which is rare) the texture is horrible. Fortunately, this is not the case here. Next you have the chocolate chip cookie. I didn’t agree with him at first when he mentioned you should make a thin layer of chocolate chip cookie dough, since I like my cookies chewy and not too crispy. However, I did it anyway and I have to admit I was wrong. Even though the layer was on the thin side the cookie still came out chewy which made this dessert even better.
Ingredients:
Ice Cream:
1 cup cream
1/2 cup whole milk
1/2 cup sugar
1 tbsp vanilla extract
pinch of salt
Chocolate Chip Cookie Dough:
1/2 cup butter
1 tbsp vanilla extract
1 cup brown sugar
1 cup all purpose flour
1 whole egg
pinch of salt
