Gingerbread Cookies Just Got A Whole Lot Better

Tis’ the season to bake gingerbread cookies! And not just any gingerbread cookies! Chewy gingerbread cookies!!! I can’t tell you how excited this makes me because I absolutely love the taste of gingerbread cookies but not really of the fan of a crispy gingerbread cookie. So when I came across this video I knew I had to share it with you, since I am sure I am not the only one who feel this excited ( or maybe I am).

The other fabulous thing about these cookies is the filling. These cookies actually have a delicious filling that you can place between two cookies. The result is amazing!


For the cookies:
170g butter, softened
50g granulated sugar, plus extra for rolling
50g dark brown sugar
100g treacle or black molasses
1 large free range egg
1 tsp vanilla extract
1 heaped tsp baking soda
1 heaped tsp ground ginger
A generous pinch of sea salt
250g plain flour, sifted
50g stem ginger, finely chopped

For the filling:
100g butter, softened
150g icing sugar, sifted
½ tsp ground ginger
