This Affocato Cupcake is a coffee lovers dream. The combination of the vanilla cupcake with the coffee on top is out of this world. And there is a small surprise inside that comes in the form of chocolate syrup.
I also love how he decorated the cupcake. Instead of your typical buttercream swirl, he took an ice-cream scooper and scooped up
frosting. It looks like a big scoop of ice-cream on top of the cupcake. So creative!
429g all-purpose flour
265g caster (superfine) sugar
1/2 tsp salt
3 tsp baking powder
375ml of milk
125ml vegetable oil
125g unsalted butter, softened
2 tbsp Greek yogurt (can substitute with sour cream)
1 tsp vanilla bean paste
2 large eggs
